Black Bean Corn Soup

The herbs, lime and wine ( I like the way those three roll of my tongue. Go ahead try it. I see you sitting at your office mumbling this and now your co workers have proof that you might just be missing a few.  That’s Ok I am sure they will walk around saying it too once they make and taste this soup. It has such an affect on one. Not because of the wine but because of all three put together. Three is always better then one. )  truly make this soup what it is.

  • 2 Red Peppers
  • 1 onion
  • 4 Carrots
  • 6 Small Potatos
  • 1 stick Butter

Saute’ these ingredients in big soup pot.

  • 5  32oz Cartons chicken stock
  • 1 Bag Frozen Corn
  • 1 Quart Black Beans (rinsed and drained
  • 1 Lime ( cut in half and squeeze out juice
  • 2 Bay Leaf
  • 1  1/2 T Dried Thyme
  • 2 T White Wine

Simmer for an hour to let flavors set in. Remove bay leaves. Makes 8 quart.
