A few chocolate chips and 1/4 cup sugar are the two ingredients that make my title untrue. So to those who will not or cannot eat a little sugar or chocolate, do not bother proceeding.
To those who eat sugar and chocolate but wish they could cut back on it, Please proceed.
Gluten-free chocolate chip zucchini muffins is the original recipe I found online but there was a problem for me, I don’t have or know where to buy some of the ingredients. I NEED A DESERT NOW. I refuse to indulge in more cheese curls and chips. Something homemade is the way I want to go. I cannot use old recipes for they call for flour ( I eat gluten free) and often lots of oil, butter and sugar. These ingredients will surely take your energy away. You will have less motivation to do anything. Even your mind becomes less creative. You will become grouchy as a result from all of it and be left hungry for more.

Good! Lets make Healthy Cupcakes.
- 3/4 cup grinded oats ( use your blender to turn oats into flour texture)
- 3/4 cup brown rice flour
- 2 T ground flax seed
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 cup coconut
- 1/4 cup sugar
- 3/4 cup chocolate chips
- set aside and mix:
- 2 eggs
- 1/4 cup maple syrup
- 1/2 cup cocoanut oil (warm in microwave to form a liquid)
- 1 tsp. vanilla
- 2 cups shredded zucchini
- combine with dry ingredients and stir with wooden spatula
- Bake 350 for 25 minutes

Make sure you use paper cupcake inserts, I had a terrible time digging them out. They are super moist when coming out of oven and they do stay that way.

Tuna salad like many other mayo based salads are just the best for summer parties however the mayo is just too loaded with fat to be considered anything close to healthy.
So, try this recipe without any mayo and make it your new summer salad for the year.
You may start looking thinner when you eat this kind of a salad. Surely you will feel much better about yourself and within yourself!
I like to eat mine on a bed of spinach, some egg and tomato’s.
And then I top it with my House dressing which really makes no sense since it is mayo based.
Bottom line – Make your Tuna Salad without mayo it is healthier this way.
Chickpea Tuna Salad
- 2 15oz chick peas (drained
- 2 T lemon juice
- 3 T white wine
- 1 cup almonds
- place the 4 ingredients above in blender ( you may need to help by smashing it with a fork, you want a chunky texture)
- Empty the mixture into a large bowl and add:
- 1 12oz Tuna
- 1/2 tsp. dry mustard
- 2 T nutritional yeast
- 3 tsp. Dijon mustard
- 2 celery stalks chopped fine
- 4 green onions
- 1/3 cup red bell pepper
- 3/4 cup peas
Ground turkey has been my newest thing. I am using it instead of hamburg in lots of recipes. I came up with this dish on a whim and it was fabulously tasty!
Saute an onion and some garlic and a green pepper. Fry your 1 Ib turkey. Add some tom. paste about 2 T and some beef broth. Just enough to give it chili like texture. LOTS of chili powder- 2- 3 T full and then a T of oregano. Some red pepper flakes for heat. Throw in a can of black beans.
Take a sweet potato. place it in a piece of foil. drizzle with some oil and sprinkle with season salt. wrap it up and bake it in oven for an hour at 350.
Try it. You can’t really go wrong with it.
These rolls, warm out of the oven are pure deliciousness and very simple to make.
- 2 Cup Warm Water
- 2 T Yeast
- 1/2 Cup Sugar
- 2 Egg
- 1 tsp. Salt
- 1/2 Cup Lard or Crisco
- 6 Cup Occident Flour (Bread Flour)
Mix together water and yeast. Beat eggs and add. Also add sugar and Crisco. Mix well. Add half of flour and mix well. Add salt and rest of flour. Mix. Let set and rise to half the size. separate into little balls and roll the dough in the palm of your hand on counter top to form a smooth top. Place on cookie sheet and let rise again to half the size. Bake at 375 for 15 minutes.

In the kitchen we all have a signature item. That one thing we make that everyone loves. The one thing that speaks above all else. It stands out. And even if nobody can identify that item at this point in time, it is still there. Find it. It is something you make well. Ok, I see all my noncooking friends reading this and shaking their head. They cannot find one such thing for the kitchen is not their place! To you dear friend I say, you still have a signature item. It may not be food it may not be knitting. We will leave that to great great grandma. But there is something you have to give to the world.
My signature item in the kitchen is my whole wheat homemade bread. As of September 2013 I no longer get to enjoy it. My stomach has issues and I have yet to find a stomach therapist to handle the case. All I know is that my stomach is calm and quiet when I do not feed it wheat or white flour. I do so wish it would get over its issue so that I can go back to eating this wonderful tasteful even healthy bread. For now I have to realize that everyone has some issues even our organs and just be ok with that.
I buy these wheat kernel’s and place them in my grinder. Magic happens and in a few minutes I have some fresh whole wheat flour
I mix together yeast, water, oil, honey, vinegar, lecithin, and wheat germ and let knead for 10 minutes.
I pull it out and form into 6 loaves. And then the rising happens.
Into the oven it goes at 325 for about 30 minutes. And then out of the oven it comes looking like this…
Ohh this bread makes the best french toast and grilled cheese! It is a bit heavy for a lunch meat sandwich.
- 3 T Yeast
- 5 1/4 Warm Water
- 3/4 cup Oil
- 1/2 cup Honey
- 1/4 cup Vinegar
- 1 T Lecithin
- 1 T Wheat Germ
- 10 cups Golden Wheat Kernels
My oldest son is 8 and all I ever bought him in his growing up years were Thomas trains. It is what kept him happy and occupied. No other toys interested him. Thomas was a familiar sight on our TV screen. His books laid around throughout the house looked at and read daily. But Thomas has been laid aside for over three years now, I suppose he is growing up. I have another son who just turned two. His interest is in trucks. He does however take interest in books and Thomas is one of his favorite. Today once again I sat down at his biding to read his thomas book, I did not feel reluctant this time and decided to read it word for word. I was surprised that he sat still and completely captivated by it through the entire story. I have read this book a thousand times and it has never spoken to me. Today it did.
The book describes each engine. Who they were. What they did. In a small paragraph you get the idea of the kind of person the engine is. I began wondering which engine best describes me and perhaps it would be better for someone else to pick me out amongst them all for it is only others that sees us best for who we truly are. I began to see my friends and family throughout the book. Such huge differences among these engines and now it is coming back to me all the movies from years before how these engines work together on their island of sodor. I have new desire to sit and watch them for I feel like they are meant to teach us something. Something that is so missing in our island of sodor. The last paragraph of the book will need to be copied and hung on my fridge, the air hung still for just a moment as I spoke the last words. Today I read a book out loud to my child like I never read a book out loud before and I have 4 children. We read a lot.

Pumpkin Delight comes from my “Amish background” As a child it was one of the things to look forward to when the leaves began to change. It was never made any other time of the year. I suppose just like many other things…Peanut Butter Eggs for instance, must they be made only at Easter? Some days my mouth waters for these and I feel trapped. I know that I must squash the desire, often I buy a peanut butter cup just to conquer the desire. It never works.
I have decided to make Pumpkin Delight whenever I desire and here is how you make it so you can enjoy it too.
Buy pumpkin from Amish neighbors.
I paid a dollar a piece. Can one live on pumpkin?
These peppers have nothing to do with Pumpkin Delight. They just look pretty and cost me a small sum of $5.00
I chop it. I cook it. I puree it skins and all. Seems a bit yuk when you think of the skins in the mix but just put your mind to other things and know that you are getting way more good nutrients in your body this way.
I put it in jars and cold pack it for an hour. (you may skip this step if you feel tired however you will not eat Pumpkin Delight year round)
A graham cracker crust with butter and sugar
A cream cheese, egg and sugar filling is whipped together and baked
Pumpkin, cinnamon, sugar and more are cooked on stove top and poured over cream cheese layer. Top it off with cool whip and a sprinkle of cinnamon for looks.
- 2 packs graham crackers crushed
- 1/3 cup sugar
- 1/2 cup butter melted
- Mix and press into 9×13 pan
- 2 eggs beaten
- 8 oz. cream cheese
- 3/4 cup sugar
- Mix and pour over crust; bake 20 minutes at 350
- 1 pint pumpkin
- 3 egg yolks
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 tsp. salt
- 1 T cinnamon
- Cook until thickened. Remove from heat. Add:
- 1 package gelatin dissolved in 1/4 cup water
- Cool slightly
- 3 egg whites
- 1/4 cup sugar
- Whip and fold into pumpkin mixture. Pour over cooled crust. Top with cool whip.
Many things change our lives. Some changes happen unaware some you are very conscious about. Jergens has been a conscious change towards good in my life. Jergens is not a person but a very dear friend of mine. I have a physical relationship to Jergens. About 4 years ago I began to lotion my legs after each shower with Jergens. within a few months I noticed a creaminess beginning to take shape. I thought to myself, What would happen if I took this relationship to the next level? and so I added the arms I was not satisfied to leave it at that so to this day my body gets a full Jergens massage daily. The answer is YES! If you do not believe in feeling fully alive in your skin then your answer may be NO or perhaps you do not feel fully women, uncaring about your looks. Again you will answer NO. Maybe you would rather spend your green on other important things. But I will tell you that at the end of the day we women can happily accomplish so much more in life when we feel good within ourselves and about ourselves. Jergens changed my life. Some may sell you electric some may sell you Jesus. Some may sell you Mary Kay some may sell you rainbow vaccum cleaners.

There are many different kinds of Jergens and they may affect you in different ways. I buy them all. I stand before them and say…which will it be today?

Sometimes you just need some butter!
The herbs, lime and wine ( I like the way those three roll of my tongue. Go ahead try it. I see you sitting at your office mumbling this and now your co workers have proof that you might just be missing a few. That’s Ok I am sure they will walk around saying it too once they make and taste this soup. It has such an affect on one. Not because of the wine but because of all three put together. Three is always better then one. ) truly make this soup what it is.
- 2 Red Peppers
- 1 onion
- 4 Carrots
- 6 Small Potatos
- 1 stick Butter
Saute’ these ingredients in big soup pot.
- 5 32oz Cartons chicken stock
- 1 Bag Frozen Corn
- 1 Quart Black Beans (rinsed and drained
- 1 Lime ( cut in half and squeeze out juice
- 2 Bay Leaf
- 1 1/2 T Dried Thyme
- 2 T White Wine
Simmer for an hour to let flavors set in. Remove bay leaves. Makes 8 quart.
